Banana Cookies

This is an old recipe I got out of an old cookie cookbook that belonged to my grandmother.

They stay nice and soft. When storing them, you may want to put a paper towel in between layers so they don’t stick together.

You will need a large mixing bowl.

You will need a tablespoon size cookie scoop or spoon for dropping the dough onto the baking sheets.

Three cookie sheets are good. If you use less, you may need to let the cookie sheets cool down in between batches.

 

Preheat your oven to 400 degrees Fahrenheit/200 Celsius

 

Ingredients:

1-1/2 cups flour

1-3/4 cup oats

1 cup sugar

1 teaspoon baking soda

1 teaspoon salt

1/4 teaspoon nutmeg

3/4 teaspoon cinnamon

1 teaspoon vanilla extract

3/4 cup butter OR coconut oil OR shortening, softened

1 egg

1 cup mashed banana

1/2 cup chopped nuts (optional)

 

Directions:

In one bowl, mix the flour, oats, cinnamon, nutmeg, salt, sugar, and baking soda.

Add the butter, egg, banana, and vanilla extract. Mix it well and add the nuts, if you are using.

Drop the dough by cookie scoop or spoon onto cookie sheets.

Bake for 12 minutes in the preheated oven.

They may sound like they are still cooking. If so, touch the top of one or two to see if they are firm, but soft.

Take out of the oven and immediately remove them to a rack to cool.

 

Using a tablespoon size cookie scoop, I got 3 dozen nice sized cookies.

Extreme Cocoa Meringues

Have you ever had meringue cookies? They are cookies made with egg whites and no flour. These are a bit simpler because you don’t need to beat the egg whites with cream of tartar. If you would like a recipe for cocoa meringues, I have that too.

Preheat your oven to 350 degrees Fahrenheit/ 177 Celsius.

Line a cookie sheet with parchment paper or lightly grease the pan.

 

Ingredients:

3 Egg whites

2- 1/4 cups Powdered sugar

1 cup Cocoa powder

2 teaspoons Vanilla or Chocolate extract

 

Add the egg whites to a large mixing bowl. Beat slightly with a whisk or large spoon, just until frothy.

Add the powdered sugar, cocoa powder, and vanilla extract and beat until smooth.

Use a tablespoon size cookie scoop to droop the cookie dough onto the baking sheet.

Bake for 8 to 10 minutes or until the cookie tops become shiny and crackly.

Take out of the oven and let cool on the sheet before removing.

 

This will make 14-16 cookies.

Using parchment paper makes the cookies almost fat free. The only fat being in the cocoa fat in the cocoa powder.

Beating the egg whites is not completely necessary, but it does make the cookies a little lighter in texture.

How dark the cookies turn out has to do with the brand of cocoa powder.

 

Applesauce-Oatmeal Cookies

My mom used to make these all the time while I was growing up.
They are moister than plain oatmeal cookies and they have great apple flavor.

Oven 375 degrees Fahrenheit.
Baking time is 8-10 minutes

Ingredients:

1/3 cup butter, softened
2/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon baking soda
1 egg
1/2 cup unsweetened applesauce
1-1/4 cups flour
1-1/4 cups dry oatmeal

In a large bowl, cream the butter.
Add the brown sugar, cinnamon, and baking soda. Blend it all together well.
Beat in the egg and applesauce.
Mix in the flour and the dry oatmeal.
Preheat the oven to 375 degrees Fahrenheit.
Drop the dough onto ungreased cookie sheets using a teaspoon or small cookie scoop.
Bake 8-10 minutes until the cookies are lightly browned.

You will get approximately 30 cookies.

Snickerdoodles

Snickerdoodles are simple sugar cookies, rolled in balls and coated with cinnamon and sugar before baking.
Yummy!

These cookies need to be chilled before rolling and baking.

Ingredients:

1/2 cup(1 stick) butter, softened
1 cup sugar
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1 egg
1/2 teaspoon vanilla extract
1-1/2 cups flour

For rolling-
2 Tablespoons sugar
1 teaspoon ground cinnamon

In a mixing bowl, beat the butter til creamy.
Add the 1 cup sugar, baking soda, and cream of tartar.
Beat that well.
Scrape sides of bowl, if needed.
Mix in the vanilla extract and egg.
Blend in the flour.
Cover and chill for an hour.

Preheat your oven to 375 degrees Fahrenheit.
Get out some cookie sheets.

In a small bowl, mix the 2 Tablespoons sugar and cinnamon.
Take the cookie dough out of the fridge and roll it into balls. About 1 inch or so.
Roll the balls into the sugar/cinnamon mixture and put on cookie sheets.
Bake for 10-11 minutes until set and edges are golden.

You will get about 36 cookies.

Oatmeal Whoopie Pies

I never met a whoopie pie I didn’t like and the oatmeal variety is no exception.
Just one will do you, as it is pretty filling.
Filling and very yummy!

Preheat your oven to 350 degrees Fahrenheit.
Grease a few cookie sheets.

Ingredients:

Cookies-

1-1/2 cups brown sugar
1/2 cup shortening
1/4 cup(1/2 stick) butter, softened
1 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
2 eggs
3 Tablespoons milk
2-1/2 cups flour
2 cups oatmeal

Filling-

1 egg white
2 Tablespoons flour
2 Tablespoons milk
1 teaspoon vanilla extract
1-3/4 cup + 1 Tablespoon powdered sugar, divided
3/4 cup shortening

First you need to assemble the cookies.
In a bowl, cream together the brown sugar, shortening, butter, salt,cinnamon, nutmeg, baking powder, baking soda, and vanilla extract.
Beat in the eggs and milk until the batter is smooth.
Stir in the flour and oatmeal.
Drop the batter by tablespoon onto the greased cookie sheets. Make sure you get an even number.
Bake for 8-10 minutes until set.
Remove from oven and leave on the baking sheet for 5 minutes before putting on a baking rack to cool.
While the cookies cool, make the filling.

In a large bowl, beat the egg white, flour, milk, vanilla extract, shortening, and 1 tablespoon powdered sugar.
When that is well blended, beat in the remaining 3/4 cup shortening.

To assemble, spread cookie with filling and top with another cookie.
You should end up with about 20 oatmeal whoopie pies.

Oatmeal Butterscotch Cookies

AKA butterscotchies. AKA oatmeal sccotchies. Whatever name you want to go by, they are fantastic.

I love this time of year. All the baking stuff is on sale!

Preheat your oven to 375 degrees Fahrenheit.
Grease a couple cookie sheets.

Ingredients:

3/4 cup(1-1/2 sticks) butter, softened
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
3 cups oatmeal
1-3/4 cups(11 oz pkg.) butterscotch chips

Beat the butter and both sugar together in a large bowl.
Add eggs and vanilla extract and mix well.
Add the cinnamon, baking soda, and salt.
Beat in the flour.
Stir in the chips and oatmeal.
Let the cookie dough rest for about 10 minutes to help soften the oatmeal.
With a cookie scoop or spoon, drop dough onto the prepared cookie sheets.
Bake 8-10 minutes until cookies start to brown.
They may seem not done, but they are fine. They will finish out of the oven.
Remove from the oven and let sit for a few minutes before removing to a cooling rack.

You will get about 4 dozen cookies.

Yummy Chocolate Chip Cookies

Chocolate chip cookies are always good. And these are no ordinary chocolate chip cookies.
They are soft and seem to have more semi-sweet chocolate flavor than in most cookies.

Preheat your oven to 375 degrees Fahrenheit.
Grease, or line with parchment, some cookie sheets.

Ingredients:

3/4 cup(1-1/2 sticks) unsalted butter, softened
2/3 cup packed brown sugar
2/3 cup sugar
2 Tablespoons light corn syrup
1 Tablespoon cider or white vinegar
2 eggs
1 Tablespoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
2-1/4 cups flour
3 cups semi-sweet chocolate chips

In a large bowl, cream together the butter, sugars, corn syrup, and vinegar.
Beat in the eggs.
Mix in the vanilla extract, salt, baking powder, and baking soda.
Stir in the flour, than the chocolate chips.
With a tablespoon or medium cookie scoop, drop cookies on the cookie sheets.
Bake for 10 minutes, just til set. The centers may look soft.
Take them out of the oven and remove to racks to cool.

Makes about 4 dozen cookies.

Whoopie Pies

Whoopie pies are two soft chocolate cookies sandwiched together with a creamy vanilla filling.
Very, very yummy!

The cookie dough may seem more like a cake batter, but that is the way it is supposed to be.
Trust me.

You will need a large bowl for your cookie dough.
You will also need a second bowl for the filling.
You will need cookie sheets.
Preheat your oven to 400 degrees Fahrenheit.

Ingredients:

cookies-

1 cup shortening
2 cups sugar
2 eggs
2 egg yolks
1 cup sour milk
1 cup hot water
4 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1 cup cocoa powder

filling-

2 egg whites
4 Tablespoons flour
4 Tablespoons milk
2 teaspoons vanilla extract
3-1/2 cups plus 2 Tablespoons powdered sugar, divided
1-1/2 cups shortening

For the cookies-
Cream the shortening and sugar together.
Add the cocoa powder and the eggs, egg yolks, and hot water.
Mix well.
Add the flour, baking soda, baking powder, salt and sour milk and beat in until smooth.
With a spoon or medium size cookie scoop, drop cookies onto cookie sheets.
Try and put even numbers on each sheet so you will know you will not end up with an odd number of cookies.
Bake in the preheated oven for 10 minutes. Remove to a rack to cool.
While they cool, make your filling.

To make the filling:
Beat together the egg whites, flour, milk, vanilla extract, 2 Tablespoons powdered sugar and the shortening. It won’t get really smooth and that’s OK.
Beat in the remaining powdered sugar until the filling is very creamy.

To assemble, spread the filling on the flat side of one cookie. Take another cookie and put it flat side against the filling to make a sandwich.

You will end up with about 34 good size whoopie pies. Maybe more, if you make them smaller.

To store them, make sure to put a paper towel in between each layer to prevent sticking.

You’re gonna love them!

Oatmeal-Raisin Cookies

What can you say about an oatmeal raisin cookie? They are hearty and super good. The raisins just add a little somethin’, somethin’ to the humble oatmeal cookie.

You will need 2 or 3 cookie sheets.

Preheat your oven to 375 degrees Fahrenheit.

Ingredients:

3/4 cup unsalted butter, softened
1 cup packed brown sugar
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 egg
1 teaspoon vanilla extract
1-3/4 cups flour
2 cups oatmeal

In a large bowl, beat the butter, brown sugar, sugar, baking powder, baking soda,cinnamon, and cloves.
Add the egg and vanilla extract and beat in well.
Mix in the flour.
Add the oatmeal.
Stir in the raisins.
Drop cookies by scoop or spoon onto the cookie sheets.
Bake for 10-12 minutes until cookies start to brown around the edges.
Cool on a wire rack.

Makes 3-4 dozen, depending on whether you use a small scoop or a medium scoop.

Soft Oatmeal Chocolate Chip Cookies

These are not the oatmeal cookies you are probably used to.

They are soft and not flat.
You can make these without chocolate chips, but they are a nice addition.

Preheat your oven to 350 degree Fahrenheit oven.
Grease some cookie sheets.

Ingredients:
1/2 cup(1 stick) unsalted butter, softened
2 Tablespoons(1/8 cup) vegetable oil
1 cup brown sugar
1 egg
6 Tablespoons(3/8 cup) sour cream
2 teaspoons vanilla extract
2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1-1/2 cups flour
1 cup chocolate chips
1 cup chopped nuts-optional

In a small bowl whisk the flour, salt, cinnamon,and baking soda.
Set aside.
In a large bowl, cream, the sugar, butter, and oil.
Add the egg and beat well.
Stir in the sour cream and vanilla extract.
Stir in the oats.
Add the flour mixture. Mix well.
Add the chocolate chips.
Let the dough rest for 15-30 minutes. Letting it rest is important. The oats will absorb moisture from the rest of the dough.

Use a tablespoon or large cookie scoop to put cookies on the sheets.
Bake the cookies for 12 minutes or until they are light brown.

Remove to a cooling rack.

Makes 3-4 dozen cookies.
